This cookie packs in some great flavors in one bite. Dark chocolate chips and peanut butter mix together to give your tongue a unexpected delight.

  • 1 cup Smooth Peanut Butter
  • 1/2 cup FiberFlour
  • 1/4 cup Unsweetened Dark Chocolate Chips
  • 1 large Egg
  • 1/8 cup Sugar Substitute


  • Whip egg. Combine chocolate chips, sugar substitute and peanut butter until well mixed.
  • Fold in FiberFlour a little at a time. Mixture will be consistent with regular cookie dough. 
  • Using small ice cream scooper or your hands, make balls about the size of a golf ball (30g).
  • Place the balls on a cookie sheet and use a fork to flatten out to desired thickness. The fork will leave typical peanut butter cookie lines on top. Flatten more for thinner cookies.
  • Place in the center of your oven and cook at 350F for 15 mins for soft cookies. Increase time as desired for firmer cookies.
  • Place on cookie rack for 15 mins to cool.
