Victoria Sponge Cake

This is a wonderful, light and fluffy dessert. Very easy to make and presents beautifully.

  • 200 g FiberFlour
  • 200 g Butter
  • 200 g Sugar Substitute Erythritol
  • 4 Eggs
  • 8 g Baking Powder
  • 1/2 pint Whipped Cream
  • 1 pint Fruit for Topping Fresh Berries


  • Add eggs to mixing bowl followed by sugar, FiberFlour, baking powder and softened butter.
  • Mix until well combined but be careful not to over-mix, just until you have a soft dropping consistency.
  • Divide into greased or lined baking tins.
  • Bake at 350° for 25-30 minutes.
  • Carefully release and turn out the sponges and leave to cool.
  • Split your sponge horizontally into two discs with a large knife.
  • Use your filling and toppings of choice. We recommend whipped cream and fresh berries.
